Unlike other varieties, there is no trace of this vine in other regions of the Mediterranean and its history has been lost in the folds of the centuries. An ancient vine, therefore, rustic, capable of withstanding the cold whipping of the winter Bora and the drought of the hot season Rediscovered in recent years, thanks to a skilful recovery work by some producers who believed in its potential. The harvest is entirely manual. The grapes are delicately de-stemmed, partly lightly macerated, favoring spontaneous fermentation. The refinement takes place partly in stainless steel and partly in wooden barrels, on its own yeasts until spring. Delicate and refined bouquet with floral and mineral notes with hints of peach and pear in the finish. The flavor is soft and savory with a fresh and enveloping, mineral aftertaste.
